Bacon Cheeseburger with Baked Parmesan Onion Rings

Nothing beats a good ol’ cheeseburger with a bit of crunch.

Ingredients

  • 1 large onion
  • 4 tbsp plain/all-purpose flour
  • ½ tsp garlic salt
  • ¼ tsp black pepper
  • 1 egg
  • 4 tbsp grated parmesan cheese
  • 75g/2.6oz panko breadcrumbs
  • ½ tsp fajita seasoning
  • 2 tbsp olive oil

Burgers

  • 1 tbsp vegetable oil
  • 450g/16oz minced beef 
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 4 slices Cheddar cheese
  • 8 rashers streaky bacon
  • 4 brioche buns
  • Large handful curly lettuce
  • 6 cherry tomatoes, slices

Sauce

  • 3 tbsp ketchup
  • 3 tbsp mayonnaise
  • ½ tsp yellow mustard
  • ¼ tsp black pepper
  • 1 tsp sweet BBQ sauce
  • ½ tsp sriracha

Method

  • Preheat the oven to 230°C/450°F.
  • Peel the onion, cut it into thick slices and separate them into individual rings.
  • Mix together the flour, garlic salt and black pepper in a bowl.
  • Lightly whisk the egg in another bowl.
  • In a third bowl, combine the Parmesan, breadcrumbs and fajita seasoning. Drizzle oil and mix so that the breadcrumbs are covered in some oil.
  • Dip the onion rings into the flour mixture, followed by the egg then the breadcrumbs. Place on a baking tray or even your Whatever Pan.
  • Cook in the preheated oven for 12-15 minutes until golden brown and crunchy.
  • Meanwhile, mix together the minced beef, pepper and salt in a bowl then form it into patties.
  • Mix the sauce ingredients together and put aside.
  • Heat your Whatever Pan until hot. Place the patties in the pan and cook, turning once until brown on the outside. Press down to help cook.
  • Add the cheese as soon as you flip the burger.
  • Let the patties rest for 2-3 minutes before assembling. 
  • Cook the bacon rashes in your freshly cleaned Whatever Pan for 2-3 minutes until crisp. 
  • Assemble the burger and enjoy!
