Tender mushrooms are gently sautéed with garlic and butter, then tossed through ribbons of pasta with lemon zest and parmesan for a creamy, glossy finish without heaviness. 300g pappardelle or tagliatelle
2 tbsp butter
1 tbsp olive oil
300g chestnut mushrooms, sliced
3 garlic cloves, finely chopped
1 lemon, zest only
40g parmesan, finely grated
Salt & black pepper, to taste

1 Bring a large pan of salted water to the boil and cook the pasta according to packet instructions. Reserve a cup of the cooking water before draining.
2 Heat the butter and olive oil in your Whatever Pan over medium heat. Add the mushrooms and cook for 6–8 minutes until golden and softened.
3 Add the garlic and cook for 1 minute until fragrant, taking care not to burn.
4 Add the cooked pasta to the pan along with a splash of the reserved pasta water. Toss gently to coat.
5 Stir through the lemon zest and parmesan, adding more pasta water if needed to loosen the sauce.
6 Season generously with salt and black pepper, then serve immediately with extra parmesan and herbs.
