The secret to a great stir-fry in a griddle pan is heat retention. 75g extra-firm tofu, cut into 2cm chunks
1 tbsp vegetable oil (divided)
1/2 small onion, chopped
1/2 red bell pepper, chopped
1 large garlic clove, finely sliced
80g fresh pineapple chunks
The Sauce:
1 tbsp tomato ketchup
1 tbsp rice wine vinegar
1/2 tbsp dark soy sauce
50ml water
To Serve:
Cooked jasmine rice
Toasted sesame seeds
1 Place your Whatever Pan over a high heat. Add 1/2 tbsp of vegetable oil and fry the tofu chunks, turning frequently, until golden brown and crispy on all sides. Remove the tofu and set aside.
2 Add the remaining 1/2 tbsp of oil to the pan. Toss in the onion, red pepper, and garlic. Stir-fry on high heat for 3-4 minutes until the vegetables have softened and taken on a slight char.
3 Add the pineapple chunks, ketchup, rice wine vinegar, dark soy sauce, and water to the pan.
4 Stir well and allow the mixture to simmer for about 1 minute until the sauce begins to thicken and turn glossy.
5 Add the crispy tofu back into the Whatever Pan. Toss gently to ensure every piece is evenly coated in the sweet and sour glaze.
6 Serve immediately over a bed of fluffy cooked rice and garnish with a sprinkle of sesame seeds.
