1 1/2 cups Mozzarella cheese, shredded
85g Cream cheese
1 large Egg
1 cup Almond flour
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/2 tsp Salt & Pepper
For the Topping:
2 tbsp Unsalted butter, melted
1 1/2 tsp Garlic, minced
Pesto (optional, for dipping)
1 Preheat your oven to 200°C / 400°F.
2 Place the mozzarella and cream cheese into your Small Jean Patrique Mixing Bowl. Microwave for 30–60 seconds, stirring halfway through, until the cheeses are completely melted and smooth.
3 Crack the egg into the melted cheese mixture and stir vigorously until well combined.
4 In a Medium Mixing Bowl, whisk together the almond flour, onion powder, garlic powder, salt, and pepper.
5 Fold the dry ingredients into the cheese mixture. Work the dough until it is uniform and pliable.
6 Line your Whatever Pan with a sheet of parchment paper.
7 Lightly wet your hands (to prevent sticking) and roll the dough into 12 even balls. Arrange them in the pan, leaving about 2.5cm (1 inch) of space between each.
8 Bake for 12 minutes. Meanwhile, whisk together the melted butter and minced garlic.
9 Remove the pan from the oven, brush the rolls generously with the garlic butter, and return to bake for a final 2–4 minutes until they are deep golden brown.
10 Serve warm on their own or with a side of pesto for dipping.
