4 Large Portobello mushrooms (stems and gills removed)
4 slices Thin cheese (Swiss, Provolone, or Cheddar)
2 Burger buns
2 tbsp Low-sodium soy sauce
2 tbsp Balsamic vinegar
1 tbsp Extra-virgin olive oil
3 cloves Garlic, minced
1 1/2 tsp Italian seasoning
1/2 tsp Black pepper
To Assemble: Pesto, Red onion (sliced), Tomato (sliced), Rocket leaves

1 The Marinade: In a large sealable bag or shallow dish, combine soy sauce, balsamic vinegar, olive oil, garlic, Italian seasoning, and pepper.

2 Marinate: Place the cleaned mushrooms into the marinade, coating them thoroughly. Let them soak up the flavors for at least 30 minutes.

3 Prep: While the mushrooms marinate, slice your buns and prepare your fresh toppings (tomato, onion, and rocket).

4 Grill: Heat your Whatever Pan over medium heat with a light coating of oil. Shake off excess marinade and place mushrooms on the pan.
