Three-Ingredient Tomato Soup
Pure Comfort in a Bowl
Forget complex recipes with endless spice lists.
The beauty of this recipe lies in the reduction process. Using The Whatever Pan allows for a wide surface area, which helps the liquids evaporate at just the right pace, intensifying the tomato flavor over 40 minutes. The cast aluminium construction ensures even heating so the butter and onions never scorch. Once simmered, simply blend to your desired consistency—the result is a silky, vibrant soup that is the ultimate companion to a toasted cheese sandwich.

40 mins
1 can (400g) Chopped tomatoes
4 tbsp Unsalted butter
1/2 Large onion, peeled and halved
1 1/2 cups Chicken stock (substitute vegetable stock for vegetarians)
1/2 tsp Fine sea salt (plus more to taste)
1 Melt: Place your Whatever Pan over medium heat and melt the butter until foaming.
2 Combine: Add the onion half (keep it whole for easy removal later if preferred, or diced for extra texture), the canned tomatoes, stock, and salt. Stir well to combine.
3 Simmer: Bring the mixture to a gentle simmer. Reduce the heat and cook uncovered for 40 minutes. Stir occasionally to ensure nothing sticks to the base.
4 Season: Taste the soup as it reduces. Add more salt or a pinch of pepper if desired to suit your preference.
5 Blend: Once the onions are completely soft and the soup has thickened, remove from heat. Use an immersion blender (or transfer to a stand blender) and process until completely smooth.
6 Serve: Pour into warm bowls and serve immediately with a crusty cheese sandwich or buttery toast.
