Beef Scouse

A hearty Liverpudlian classic filled with slow-cooked root vegetables and tender beef that feels like a warm hug.

The Comfort Classic – Hearty Beef Scouse

A staple of maritime history, Beef Scouse is a rich, nourishing stew that relies on simple, high-quality ingredients and patient slow-cooking to develop its signature depth of flavor.

This Beef Scouse is a celebration of rustic, home-style cooking elevated by professional techniques. By using The Whatever Pan, you can achieve a deep, caramelized sear on the beef batches before transitioning into a gentle two-hour simmer. The addition of bitter ale and fresh herbs creates a sophisticated gravy that beautifully coats the tender carrots and potatoes. It is a one-pan wonder that brings a piece of Northern heritage to your kitchen table, perfect for chilly evenings and family gatherings.

Cooks

2 hours 35 mins

500g/17.6oz beef
1 tbsp plain flour
3 tbsp vegetable oil
1 large onion
4 carrots
250ml/8.5fl. oz bitter ale
250ml/8.5fl. oz chicken stock
2 bay leaves
2 thyme sprigs
2 beef stock cubes
500g/17.6oz potatoes
Optional: Pickled red cabbage or cooked beetroot, to serve

1 In your small Jean Patrique Plastic Mixing Bowl, toss together the beef and flour until evenly coated.

2 Add 1 tbsp of oil to your Whatever Pan and sear the flour-coated beef on high-heat in batches until browned on all sides. Set the beef aside on a plate.

3 Reduce the heat to medium and pour the remaining oil into your Whatever Pan. Fry the onion and carrots until they begin to soften.

4 Return the beef to the pan. Add the ale, stock, and herbs, then crumble in the stock cubes. Season well with salt and pepper.

5 Bring the mixture to a boil, then immediately reduce the heat to a low simmer.

6 Arrange the potatoes in an even layer directly on top of the stew.

7 Cover with the glass lid and cook for 2 hours 35 mins until the meat is melt-in-the-mouth tender and the potatoes are soft.

8 Plate up and serve with a side of pickled red cabbage or cooked beetroot for the traditional Scouse experience. Enjoy!
