150g/0.3lbs self-raising flour
½ tsp baking powder
2 tbsp golden caster sugar
2 large eggs
180ml/6.1 fl oz. whole milk
1 tbsp sunflower oil (plus extra for the pan)
1 tbsp vanilla extract
Honey & fresh berries, to serve

1 Sift the flour and baking powder into your Jean Patrique Mixing Bowl to ensure no lumps.

2 Make a well in the center and add the eggs, oil, and caster sugar. Gradually pour in the milk while whisking constantly until the batter is smooth. Stir in the vanilla extract.

3 Place your Stonetastic Granite Frying Pan on the hob over a very low heat. Lightly brush the pan and the inside of your crumpet rings (approx. 3.5cm high) with oil.

4 Place the rings in the pan and fill them ¾ full with the pancake batter.

5 Cover the pan with a lid. This traps the steam and helps the pancakes rise. Cook for approximately 10 minutes on the lowest heat setting.

6 Once the tops are covered in tiny bubbles and the edges look set and dry, you are ready to flip.

7 Carefully turn the pancakes over within their rings. Cook for a further 2 minutes on the other side.

8 Remove the rings gently and stack the pancakes high.

9 Drizzle with plenty of honey and top with fresh seasonal berries.

10 Serve immediately while warm and fluffy. Enjoy!
