500g/18oz waxy potatoes (such as Charlotte or Maris Peer)
9 large eggs
2 small onions, finely chopped
1 red bell pepper, chopped
2 tbsp unsalted butter
25g/1oz fresh chives
Salt & freshly ground black pepper, to taste
1 Cube the potatoes into bite-sized pieces. Place them in a pot of boiling salted water and simmer for 10 minutes until tender but holding their shape. Drain and set aside.
2 Place your Whatever Pan over a low heat and add the butter. Once melted, add the onions. Sauté for 10-15 minutes, stirring occasionally, until they reach a deep golden brown.
3 Add the chopped red peppers to the pan and cook for a further 5 minutes until softened.
4 Gently stir the cooked potatoes into the pan, ensuring they are coated in the butter and onion mixture.
