2 Tuna steaks
½ cup Sesame seeds
The Marinade: ½ cup soy sauce, ¼ cup chopped scallions, 2 tbsp fresh lemon juice, 1 tsp sesame oil, 1 tsp ginger
The Sauce Thickener: ½ tsp cornstarch mixed with 1 tsp water

1 Marinate: In a ziplock bag, combine the soy sauce, scallions, lemon juice, sesame oil, and ginger. Add the tuna steaks, coat thoroughly, and refrigerate for 20 minutes.

2 Coat: Spread the sesame seeds on a shallow plate. Remove the steaks from the marinade (reserve the liquid), brush off any excess ginger or scallions, and press all sides into the seeds until fully encrusted.

3 Grill: Heat your Whatever Pan over high heat and apply a light coating of oil. Grill the tuna for 3 minutes per side for a perfect medium-rare sear.

4 Rest: Remove the tuna from the pan and set aside to rest briefly.
