750g chicken thigh fillets, cut into bite-size pieces
150g full-fat natural yoghurt
1 tbsp lemon juice
1 tsp turmeric
2 tsp garam masala
½ tsp cayenne pepper (or to taste)
1 tsp ground cumin
1 tbsp fresh ginger, finely grated
2 garlic cloves, crushed
30g butter
1 tbsp vegetable or sunflower oil
250ml tomato passata
150ml double cream
1 tsp sugar
Salt & black pepper, to taste

Steamed basmati rice, naan bread or flatbreads
Fresh coriander (optional)

1 In a large bowl, combine the yoghurt, lemon juice, turmeric, garam masala, cayenne pepper, cumin, ginger and garlic.

Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 3 hours, or overnight for best flavour.

2 Heat the oil and butter together in your Whatever Pan over medium heat until melted and gently sizzling.

3 Add the marinated chicken (shaking off any excess marinade) and cook for 5–7 minutes, turning occasionally, until lightly golden on all sides.

4 Pour in the tomato passata and stir well to combine. Reduce the heat to low and simmer gently for 15–20 minutes, until the chicken is cooked through and the sauce has thickened.

5 Stir in the double cream and sugar, then season with salt and black pepper to taste. Simmer for a further 5 minutes, until rich, smooth and glossy.

6 Taste and adjust seasoning if needed. Serve hot with basmati rice or naan, garnished with fresh coriander if desired.
