3 large chicken breasts, halved
½ cup all-purpose flour
3 eggs, whisked
⅓ cup olive oil
1½ cups breadcrumbs
½ cup parmesan, shredded
2 tsp Italian herb blend
1 tsp garlic powder
1½ cups marinara sauce
1½ cups mozzarella, sliced or shredded
2 tbsp fresh basil, torn
Salt & pepper, to taste
1 Preheat your oven to 220°C/425°F.
2 Place the chicken breasts in a freezer bag and gently tenderize with a rolling pin until they reach a uniform thickness of 1.3cm (½ inch).
3 In a Jean Patrique Mixing Bowl, combine the breadcrumbs, shredded parmesan, salt, pepper, Italian herbs, and garlic powder.
4 Set up your breading station with three shallow bowls: one with flour, one with the whisked eggs, and one with your breadcrumb mixture.
5 Coat each piece of chicken in flour, dip into the egg, and finally press firmly into the breadcrumbs to ensure an even, professional-grade crust.
6 Heat the olive oil in your Whatever Pan over medium heat. Sear the chicken for 2 minutes per side until golden.
7 Wipe the pan clean or use a second Whatever Pan. Arrange the seared chicken, layer with mozzarella, and top with the marinara sauce.
8 Bake uncovered for 14 minutes.
9 Remove briefly to sprinkle with the remaining parmesan, then return to the oven for 1 minute until the cheese is bubbling.
