This Boulangère—traditionally “the baker’s potato”—is a sophisticated alternative to a roast or mash. By slow-baking the potatoes in a garlic-infused stock rather than cream, the dish remains light while developing a deep, savory flavor. Arranged in a striking circular pattern in The Whatever Pan, it achieves a perfect balance of tender centers and beautifully crisp, caramelized edges.

2.4kg potatoes
1 tbsp fresh thyme leaves
3 garlic cloves, halved
⅓ cup extra virgin olive oil
1 tsp cracked black pepper
2 tsp chicken-style stock powder
⅓ cup hot water
1 tsp sea salt
¼ cup parmesan, finely grated

1 Preheat your oven to 200°C/400°F.

2 Peel the potatoes using the vegetable peeler from your Stainless Steel Kitchen Utensils Set. Halve and slice them thinly lengthwise for uniform cooking.

3 Transfer the slices to your Jean Patrique Mixing Bowl. Coat thoroughly with the olive oil, fresh thyme, and halved garlic cloves.

4 Arrange the potato slices in your Whatever Pan in a circular, rose-like pattern, starting from the outside and working inwards.

5 Dissolve the stock powder in hot water and pour it carefully over the arranged potatoes.

6 Season evenly with the sea salt and cracked black pepper.

7 Cover the pan tightly with foil and bake for 30 minutes to tenderize the layers.

8 Remove the foil and continue to bake for 40–45 minutes until the potatoes are soft and the tops are crisp and golden.

9 Sprinkle with finely grated parmesan and a final touch of fresh thyme.

10 Allow the dish to stand for 5 minutes to let the flavors settle before serving directly from the pan.
