Homemade Granola
The Breakfast Staple – Honey & Pecan Toasted Granola
There is nothing quite like the aroma of fresh granola toasting in the oven.
The secret to a perfect granola is even browning without scorching the delicate seeds. While many turn to flat baking sheets, The Whatever Pan is a superior choice. Its cast aluminium construction provides deep, consistent heat that toasts the oats from every angle. The pan’s generous depth also makes stirring every 10 minutes effortless and mess-free. Whether you enjoy it over Greek yogurt, with cold dairy-free milk, or as a quick dry snack, this homemade version is free from refined oils and tailored exactly to your palate.

Cooks
30 mins
360g/4 cups rolled oats
65g/½ cup pecan halves, roughly chopped
55g/½ cup whole almonds
65g/½ cup sunflower seeds
120ml/½ cup olive oil (or melted coconut oil)
170g/½ cup honey (or maple syrup for vegan option)
65g/½ cup dried cranberries
½ tsp ground cinnamon
1 Preheat your oven to 175°C/350°F.
2 In a large Jean Patrique Mixing Bowl, combine the rolled oats, pecans, almonds, sunflower seeds, and cinnamon. Mix thoroughly to distribute the spices.
3 Pour in the olive oil and honey. Stir well until every oat and nut is evenly coated and glistening.
4 Pour the mixture into your Whatever Pan and spread it into an even layer.
5 Bake for 30 minutes. Pro Tip: Use a spatula to stir the granola every 10 minutes to ensure the edges don’t brown too quickly and the center toasts perfectly.
6 Once the granola is a deep golden brown, remove the pan from the oven.
7 Stir in the dried cranberries while the mixture is still warm.
8 Allow the granola to cool completely in the pan. This is crucial for creating those coveted crunchy clusters!
9 Store in an airtight container for up to 3 weeks.
10 Customization Tip: Feel free to swap the nuts for walnuts or pistachios, or replace the honey with maple syrup for a delicious vegan alternative.
