900g/2lbs chicken breasts, trimmed
¼ cup extra virgin olive oil
¼ cup lemon juice
1 tbsp dried basil
1 tbsp dried parsley
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
¼ tsp crushed red pepper flakes
1 Place the chicken breasts in a large sealable bag. Add the dried basil, parsley, salt, pepper, garlic powder, onion powder, and red pepper flakes.
2 Pour in the lemon juice and extra virgin olive oil. Seal the bag, squeezing out as much air as possible.
3 Shake and massage the bag thoroughly to ensure the marinade coats every inch of the chicken.
4 Refrigerate and let the chicken marinate for at least 1 hour, or up to 12 hours for maximum flavor.
5 Heat your Meat Master over medium-high heat until the surface is piping hot.
6 Place the marinated chicken breasts flat onto the Meat Master. Sear for 5 minutes to achieve deep golden grill marks.
7 Flip the chicken over and cook for a further 5 minutes.
8 Use the Meat Master’s integrated thermometer to check the internal temperature. Once it reaches 74°C/165°F, remove from the heat immediately.
9 Allow the chicken to rest for 5 minutes to let the juices redistribute.
10 Slice and serve with a fresh salad or roasted vegetables. Enjoy!
