1 block (approx 400g) extra-firm tofu
1 tbsp olive oil
1 tbsp cornstarch
1 tsp sea salt, 1/2 tsp garlic powder, 1/4 tsp black pepper

The Magic Garlic Sauce:
1/2 cup water
1/4 cup soy sauce
2 tbsp maple syrup
1 tbsp black pepper
2 tbsp cornstarch
2 tsp ground ginger

For the Sauté:
4 tbsp unsalted butter
1 small red onion, minced
1–2 green chillies, minced
10 cloves garlic, minced
Garnish: Spring onions and toasted sesame seeds

1 Preheat your oven to 200°C/400°F. Line your Whatever Pan with a sheet of baking parchment.

2 Use your Chopaholic Chef’s Knife to cut the tofu into 2cm cubes. In a bowl, toss the cubes with olive oil, cornstarch, salt, garlic powder, and pepper until evenly coated.

3 Spread the tofu in the pan and bake for 15 minutes. Flip each piece and bake for a further 15 minutes until crisp and golden. Remove tofu and set aside.

4 Whisk all Magic Garlic Sauce ingredients together in a jug until the cornstarch is fully dissolved.

5 Clean the Whatever Pan and place it over medium heat. Melt the butter and sauté the minced onion and chillies for 4 minutes.

6 Add the minced garlic and sauté for another 2 minutes until fragrant but not burnt.

7 Pour the sauce mixture into the pan. Stir constantly for 2–3 minutes until the sauce bubbles and thickens into a dark, glossy glaze.

8 Toss the crispy tofu back into the pan, stirring gently to coat every piece in the magic sauce.

9 Garnish with sliced spring onions and toasted sesame seeds. Serve immediately over a bed of fluffy jasmine rice.
