2 small aubergines, halved
50g/1.7oz brown miso paste
100g/3.5oz couscous
1 red chilli, thinly sliced
Fresh coriander, chopped for garnish
Vegetable oil, for roasting
Salt, to taste
1 Preheat your oven to 200°C/400°F.
2 Fill your Jean Patrique Saucepan with salted water and bring to a rolling boil over medium-high heat.
3 Using a sharp knife, score the flesh of the halved aubergines in a diagonal criss-cross pattern. Place them cut-side up in your Whatever Pan.
4 In a small bowl, whisk the miso paste with 25ml of water to create a thick, spreadable glaze. Coat the scored surface of the aubergines generously.
5 Cover the Whatever Pan with its glass lid and bake for 30 minutes to steam the aubergines until tender.
6 Meanwhile, lightly toast the couscous in a separate pan with ½ tbsp of oil for 2 minutes until golden. Tip into the boiling water in your saucepan and simmer for 8-10 minutes. Drain and set aside.
7 Remove the lid from the Whatever Pan and continue to roast for a further 15-20 minutes. This allows the miso glaze to caramelize and become rich and sticky.
8 Fluff the couscous and divide between two plates.
9 Top with the soft miso aubergine, sliced red chillies, and a handful of fresh coriander.
10 Serve immediately and enjoy the deep, savory flavors.
