4 fresh salmon fillets
1 tbsp peanut oil
3 tbsp Massaman curry paste
400ml coconut cream
1 cinnamon stick
5 cardamom pods, lightly crushed
1 star anise
2 fresh kaffir lime leaves
2 tsp fish sauce
1 cup fresh Thai basil leaves
1 fresh red chilli, sliced
To Serve: Steamed jasmine rice

1 Place your Whatever Pan over a medium-high heat and add the peanut oil. Sear the salmon fillets for 1-2 minutes on each side until golden but not fully cooked through. Transfer to a plate and set aside.

2 Lower the heat slightly. Add the Massaman curry paste to the pan and fry for 1-2 minutes, stirring constantly until fragrant and the oil begins to separate.

3 Toss in the cinnamon stick, crushed cardamom pods, and star anise. Stir for 30 seconds to toast the whole spices and release their aromas.

4 Pour in the coconut cream and add the kaffir lime leaves. Bring to a gentle simmer and let the sauce thicken for 10 minutes.

5 Stir in the fish sauce for that essential salty-umami balance. Return the salmon fillets to the Whatever Pan, nestling them into the sauce for 2-3 minutes until warmed through and flaky.

6 Scatter the fresh basil leaves and sliced red chillies over the top.

7 Serve immediately in shallow bowls over a bed of fluffy jasmine rice.
