2 large chicken thighs & legs (skin-on)
3 medium sweet potatoes
300g long-stem broccoli
1 large red onion
2-3 tbsp Piri-Piri spice mix
2 tbsp olive oil
Salt & pepper, to taste
1 Preheat your oven to 180°C / 350°F.
2 Peel the sweet potatoes and cut them into large, uniform chunks. Toss them in your Medium Mixing Bowl with a drizzle of olive oil and half of the Piri-Piri spice mix.
3 Transfer the potatoes to your Whatever Pan, pushing them to one side to leave half the pan free.
4 Place the chicken pieces in the empty half of the pan. Season generously with the remaining Piri-Piri spice.
5 Using your Chopaholic Knife, cut the red onion into thick wedges. Scatter them over the chicken and drizzle everything with a little more olive oil.
6 Roast in the center of the oven for 40 minutes.
7 Add the broccoli to the pan, nestling it between the chicken and potatoes. Season the broccoli with a pinch of spice and a final drizzle of oil. Roast for another 10–15 minutes.
8 The Finishing Touch: Remove the chicken, onions, and broccoli from the pan and set aside. Using a fork, mash the roasted sweet potatoes directly in the Whatever Pan, stirring them into the flavorful pan juices.
9 Spread the mash evenly, top with the chicken and vegetables, and serve immediately.
