2 large red apples (Red Delicious or Pink Lady work best)
4 tbsp caster sugar (divided)
1 sheet ready-rolled puff pastry
1 tbsp all-purpose flour (for dusting)
1 tsp ground cinnamon
1 tsp pure maple syrup
Non-stick spray or butter for greasing
1 Preheat your oven to 190°C / 375°F.
2 Core the apples and slice them into paper-thin crescents. Place them in a Mixing Bowl with 2 tbsp of sugar, toss gently, and microwave on high for 90 seconds until pliable. Let rest for 10 minutes, then drain the juice into a separate bowl and keep it for the glaze.
3 On a lightly floured surface, cut your puff pastry into 6 long, even strips.
4 Mix the remaining 2 tbsp of sugar with the cinnamon. Sprinkle each pastry strip with the mixture.
5 The Roll: Arrange apple slices along the top half of a pastry strip, overlapping them so the skin edge sticks out over the top. Fold the bottom half of the pastry up over the base of the apples. Roll the strip from one end to the other to create the rose shape. Pinch the end to seal.
6 Lightly grease your Whatever Pan. Place the apple roses inside, ensuring they have a little space to expand.
7 Bake for 40 minutes until the pastry is puffed and deep golden brown.
8 The Glaze: Mix the reserved apple juice with the maple syrup. Microwave for 90 seconds until thickened. Brush the hot glaze over the roses as soon as they come out of the oven for a stunning shine.
