200g raw prawns, peeled and deveined
4-5 slices thick white bread (crusts removed)
100g sesame seeds
1 garlic clove, minced
1 tsp fresh ginger, grated
1 egg white (for the paste)
1 egg, beaten (for the coating)
2 spring onions, finely sliced
1 tsp light soy sauce
1/2 tsp golden caster sugar
Sesame oil (for brushing)
Vegetable oil (for shallow frying)
1 In a food processor, combine the prawns, garlic, ginger, egg white, sugar, and soy sauce. Blitz until the mixture forms a smooth, thick paste.
2 Transfer the paste to a bowl and fold in the sliced spring onions. Cover and chill in the fridge for 30 minutes—this helps the flavors develop and makes the paste easier to spread.
3 Brush one side of each bread slice with a light coating of sesame oil.
4 Spread a thick, even layer of the prawn mixture onto the oiled side of the bread, ensuring you cover it right to the very edges.
5 Brush the top of the prawn paste and the sides of the bread with the beaten egg, then press the bread firmly into a tray of sesame seeds until the top is completely coated.
6 Pour 2-3cm of vegetable oil into your Whatever Pan and heat until a cube of bread sizzles instantly.
7 Carefully place the bread in the pan, bread-side down, and fry for 1.5 minutes. Flip carefully and fry for another 1-2 minutes until the seeds are golden and the prawn paste is pink and cooked through.
8 Drain on kitchen paper, slice into triangles using your Chopaholic Knife, and serve hot with sweet chili or soy sauce.
