2 kg Baby back pork ribs
2 tbsp Olive oil (divided)
The Rub: 2 tsp garlic powder, 1 tsp onion powder, 2 tsp paprika, 2 tsp salt, 1 tsp cracked black pepper, ½ tsp cumin, 1 tsp chili/cayenne (optional)
The Sauce: 500ml BBQ sauce, 3 tbsp minced garlic, 1 tbsp Worcestershire sauce, ½ – 1 tbsp cayenne pepper, 1 tsp salt
1 Prep: Preheat your oven to 180°C (350°F). Peel away the thin membrane from the back of the ribs for maximum tenderness.
2 Season: Combine all dry rub spices in a small bowl. Rub the mixture generously over both sides of the ribs, then drizzle with 1 tbsp olive oil.
3 Sear: Heat your Whatever Pan over high heat. Sear the ribs for 2-3 minutes per side to create deep grill marks and develop flavor.
4 Slow Roast: Place the ribs meat-side up in a roasting tray (or use the Whatever Pan if it fits!), cover tightly with foil, and bake for 2 hours.
5 Glaze: While roasting, whisk together all sauce ingredients. After 2 hours, remove ribs from the oven, discard foil, and coat heavily with the sauce.
6 Caramelize: Increase oven to 240°C (460°F). Return the uncovered ribs to the oven for 10 minutes until the sauce is bubbling and sticky.
7 Rest & Serve: Let the meat rest for 10 minutes before slicing between the bones. Serve with extra sauce on the side!
