1 1/2 tbsp extra-virgin olive oil

2 tbsp green peppercorns, crushed
2 tbsp steak sauce (e.g., A.1. or Worcestershire)
1 tbsp fresh chives, finely chopped
1 tsp lemon zest, grated

1 Make the Butter: Crush the peppercorns until coarse. In a bowl, whisk the softened butter and steak sauce until combined, then fold in the peppercorns, chives, and lemon zest. Season with a pinch of salt.

2 Place the butter mixture on parchment paper, roll it into a log, and refrigerate for at least 30 minutes until firm.
