Seared T-Bones with Peppercorn Steak Butter
The Ultimate Steakhouse Experience
As it melts over the resting steak, it creates a silky, peppery sauce that enhances every bite with brightness and depth.
The Whatever Pan is the ultimate tool for a high-heat sear. Its cast aluminum construction provides the intense, even heat needed to caramelize the exterior of a thick T-bone without overcooking the center. The characteristic griddle lines don’t just look professional; they lift the meat slightly to allow heat to circulate, ensuring a perfect medium-rare. Because the pan is naturally non-stick and retains heat so well, you can achieve that crusty, seasoned bark that usually requires a professional broiler.

3 thick-cut T-bone steaks (room temperature)
1 1/2 tbsp extra-virgin olive oil
Salt & black pepper, to taste
For the Steak Butter:
113g unsalted butter, softened
2 tbsp green peppercorns, crushed
2 tbsp steak sauce (e.g., A.1. or Worcestershire)
1 tbsp fresh chives, finely chopped
1 tsp lemon zest, grated
1 Make the Butter: Crush the peppercorns until coarse. In a bowl, whisk the softened butter and steak sauce until combined, then fold in the peppercorns, chives, and lemon zest. Season with a pinch of salt.
2 Place the butter mixture on parchment paper, roll it into a log, and refrigerate for at least 30 minutes until firm.
3 Pat the steaks dry with a paper towel—this is crucial for a good sear. Brush both sides with olive oil and season generously with salt and pepper.
4 Preheat your Whatever Pan over medium-high heat. Wait until the pan is shimmering hot before adding the meat.
5 The Sear: Place the steaks in the pan. For a perfect medium-rare, cook for 6 minutes per side without moving them, allowing the griddle lines to form.
6 Remove the steaks from the pan and let them rest for 5 minutes. Top each steak with a thick slice of the chilled peppercorn butter and watch it melt into a decadent sauce before serving.
