Bacon Cheddar Biscuits

A cheesy, buttery and meaty take on the classic American biscuits.

Ingredients

  • 2½ cups all-purpose flour
  • 8 tbsp cold butter, cubed
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp onion powder
  • 1½ cup cheddar cheese, grated
  • 1 cup cold buttermilk
  • 450g/16oz bacon (optional)
  • ⅓ cup spring onion

Method

  • Preheat the oven to 230°C/450°F.
  • In a food processor or blender, mix together the flour and butter. Pulse to mix until it has some crumb-like consistency.
  • Add the baking powder, baking soda, salt and onion powder. Pulse another 2-3 times.
  • Add the cheese and pulse 2-3 times.
  • Add the buttermilk and pulse until it forms a dough. Be sure not to overmix it.
  • Remove the dough onto a lightly floured surface.
  • Cook your bacon and allow it to cool completely.
  • Knead the bacon and spring onions into the dough until combined.
  • Using your hands, press the dough into a 2.5cm/1in thick rectangle. Fold into half and press down to form a 2.5cm/1in thick rectangle. Using a circular cookie cutter, cut out as many biscuits as possible. Repeat with the remaining dough.
  • Place the cut out biscuits in your Whatever Pan and brush it with some buttermilk.
  • Bake for 18-20 minutes.
  • Allow the biscuits to cool slightly then serve!
