Ingredients
- 1/2 cup unsalted butter, at room temperature
- 2/3 cup brown sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup buttermilk
- 2 large apples, sliced thinly
- 1 tbsp cinnamon sugar (mixture of cinnamon and sugar)
Method
- Preheat the oven to 200°C and grease the skillet with butter.
- In a bowl add brown sugar and unsalted butter and mix thoroughly with an electric mixer for 2-3 minutes until light and fluffy.
- Add vanilla extract, egg and continue to beat until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
- With the mixer on low speed alternate adding the flour mixture and the buttermilk. Mix until just combined and transfer the batter into the buttered pan. Use a spatula to evenly distribute the batter.
- Cut apples into thin slices and arrange them on top of the apples in concentric, overlapping circles that look like a flower.
- Keep adding the apple until the entire skillet is covered, then sprinkle with cinnamon sugar.
- Bake for 20 minutes or until the edges are golden brown.
- Serve warm with a side of custard or ice cream if desired.
