Ingredients
- 8 small tortillas
- 8 large eggs
- 2 avocados, sliced
- Red salsa
- Parmesan cheese
Refried beans
- 2 tablespoons butter
- 1 small white onion, peeled and diced
- 2 cans Pinto beans
- ½ cup vegetable stock
- 1 tsp chilli powder
- 1 tsp ground cumin
- ½ tsp dried oregano
Method
- Make the refried beans by heating some oil in your Jean Patrique 20cm Saucepan + Lid. Cook the onions until soft.
- Add all the remaining ingredients and allow to simmer. Once the beans are soft, mash to your desired consistency.
- Heat some butter in your Whatever Pan and scramble your eggs. Feel free to add herbs and seasonings of your choice.
- Assemble the tacos by spreading some refried beans onto the tortillas. Fill it with the egg, avocado, red salsa and Parmesan cheese.
- Serve and enjoy!
