Ingredients
- 1 tbsp peanut oil
 - 4 salmon fillets
 - 3 tbsp Massaman curry paste
 - 1 cinnamon stick
 - 5 cardamom pods, crushed
 - 1 star anise
 - 400ml coconut cream
 - 2 fresh kaffir lime leaves
 - 2 tsp fish sauce
 - 1 cup fresh basil leaves
 - Sliced fresh red chilli
 - Cooked jasmine rice, to serve
 
Method
- Pour the oil into your Whatever Pan and cook the salmon for 1-2 mins until golden. Transfer to a plate.
 - Add the Massaman curry paste to your pan. Cook for 1-2 mins until aromatic.
 - Add the cinnamon, cardamom, and star anise the stir for 30 seconds to bring out the fragrance.
 - Stir in the coconut cream and lime leaves. Simmer for 10 mins.
 - Pour in the fish sauce then return the salmon to the pan until the fish is warmed through.
 - Add the basil and chillies.
 - Serve with rice and enjoy!
