Strawberry Skillet Pie

Ingredients

For the crust

  • 170g/1 ¼ cups plain flour
  • 1tbsp sugar
  • ½ tbsp salt
  • 8tbsp/1 stick cold butter
  • 3tbsp water

For the filling 

  • 1.13kg/2 ½ lbs strawberries
  • 340g/1 ½ cups sugar
  • 3tbsp quick cooking tapioca
  • 85g/1 cup rolled oats
  • 70g/½ cup flour
  • 100g/½ cup sugar
  • 8 tbsp/1 stick cold butter

Method

  • Preheat oven to 170°C/340°F.
  • For the crust, mix flour, sugar, salt, butter, and water using your hands until it forms a uniform ball. 
  • Lay it out on a floured surface with a rolling pin.
  • Butter your Whatever Pan and place the crust on top of it.
  • For the filling, mix the strawberries, sugar and tapioca in a bowl and add the filling on top of the crust in your pan.
  • In a separate bowl mix the oats, flour, sugar and butter until it becomes a paste and place on top of the strawberry mix.
  • Place in the oven for 1 ½ hours and serve!
