- 4 tbsp unsalted butter
- ½ large onion
- 1 can of chopped tomatoes
- 1½ cups chicken stock
- ½ tsp fine sea salt
- Melt the butter in your Whatever Pan.
- Throw in your onions, chopped tomatoes, stock and salt. Mix to combine.
- Let it come to a simmer, then cook uncovered for 40 mins. Stir occasionally and season to your taste.
- Blend the soup until smooth and it’s ready to be served.
- Enjoy with a cheese sandwich or some toast.
