Blackened roast salmon

Use punchy spices to flavour this salmon dish. This healthy dish will definitely not disappoint!

Ingredients

  • 3 tbsp. olive oil
  • 2 salmon fillets
  • 3 bell peppers, cut into chunks
  • 2 red onions, peeled and cut into wedges
  • 1 garlic clove, crushed
  • ½ tsp. cayenne pepper
  • 1 tbsp. brown sugar
  • 1 tsp. dried oregano
  • 400 gr red beans
  • 2 limes, zested and juiced 
  • Salt, to taste
Method
  • Heat olive oil in your frying pan and start frying the bell peppers and onion.
  • Meanwhile, in a small bowl mix the garlic, brown sugar, cayenne pepper, oregano and salt.
  • Add it to your vegetables and sauté for a few minutes. Add the red beans and the lime zest and fry until cooked through. Set aside.
  • In your whatever pan add salt and olive oil and start frying the salmon fillets.
  • Add the lime juice and the vegetable mixture and fry until the salmon is cooked through.
