Ingredients
- ½ tbsp. Olive oil
 - ¼ cup chopped onion
 - ¼ cup chopped tomatoes
 - ½ cup red peppers
 - Small handful baby spinach
 - 4 beaten eggs
 
Instructions
- In a pan, heat up olive oil; add the chopped onion, chopped tomatoes, chopped red pepper and a handful of baby spinach.
 - Stir, cover your frying pan with the lid and let cook until onions are transparent.
 - Add your beaten eggs to the vegetables. Keep stirring and cook until eggs are set.
 - Serve immediately and enjoy!
