Ingredients
For the lamb koftas
- 8 skewers
- 500g/1 lb lamb mince
- ½ onion, chopped
- ¼ cup breadcrumbs
- 2 cloves garlic, crushed
- 2 tbsp chopped fresh coriander
- 2 tsp cumin
- 2 tsp coriander powder
- 2 tsp paprika
- 1.5 tsp ground cinnamon
- 1 tsp cayenne pepper
- ½ tsp black pepper
- Salt
- Olive oil
For the yoghurt dressing
- 1 cup Greek yoghurt
- 1 tbsp extra virgin olive oil
- 1 garlic clove, crushed
- 1 tsp cumin
- Salt and pepper, to taste
- 1 tbsp fresh lemon juice
To serve
- 8 small flatbreads, warmed
- Shredded red cabbage
- Shredded carrot
Method
- In a large bowl combine the mince meat, onion, breadcrumbs, garlic, coriander, cumin, coriander powder, paprika, cinnamon, cayenne pepper, black pepper and salt.
- Create 8 Koftas by grabbing a handful of the mix and moulding it into a long, oval shape around the skewers.
- Heat olive oil in your Whatever Pan and grill the Koftas for 3-4 minutes on each side. Don’t turn until they are well sealed or the meat sticks to the Whatever Pan.
- For the yoghurt dressing simply mix together the greek yoghurt, extra virgin olive oil, garlic, cumin, salt, pepper and lemon juice.
- Serve in a flatbread with shredded red cabbage and carrots, drizzle with the yoghurt dressing and serve!
