Ingredients
- 1 tbsp. ground cumin
- 1 tbsp. ground coriander
- 1 ½ tsp. smoked paprika
- 1 tbsp. coconut oil
- 1 chopped onion
- 1 small butternut squash
- ½ tsp. chillies
- 2 tsp. thyme
- 1L chicken broth
- 6 oz frozen broccoli
- 8 oz canned beans
- Juice of 1 lemon
- Salt & pepper to taste
- Bunch of fresh parsley
- 100g feta cheese
Instructions
- In a saucepan, add cumin, coriander and paprika and warm up for 1 minute.
- Add coconut oil, mix well, add the onion and fry for 5 minutes.
- Add the butternut squash, chillies, thyme, chicken broth, cover and cook for 20 minutes.
- Add the broccoli, beans, lemon juice and salt and pepper to taste.
- Cook for an additional 10 minutes, sprinkle some feta cheese and parsley and serve!
